Ingredients:
Paneer (cut into very small pieces or grated) – 1 cup,
Onion– 1 medium - thinly sliced,
Salt as per taste (optional),
Pepper powder as per taste,
Butter – 1 tbsp,
Coriander leaves chopped – 1 tbsp,
Lemon-extract – 1 tsp,
Masala to ground:
Coriander seeds – 2tbsp,
Dry red chilly – 4 to 5 nos,
Fennel seeds – 1 tsp,
Ginger – 1 inch long piece,
Garlic – 3 flakes,
Salt as per taste,
Olive oil – 1 tbsp,
Method:
- Grind all the masala ingredients to a paste by adding very little water.
- Marinate the Paneer using the ground paste, keep in refrigerator for half hour or more.
- Heat butter in pan, add onion, pepper and salt(optional) and sauté till light brown.
- Add the marinated paneer and sauté for about 10 – 12 minutes or till done.
- Lastly garnish with coriander and dash of lime.
- Bhurji is ready.
- Normally Bhurji is prepared in a different method, the above method is my own adaptation of the original.
