Whole Green Gram Laddoo

Ingredients:
Whole green gram - 1 cup,
Sugar – ½ cup,
Ghee – ½ cup,
Cardamom powder - 3/4 tsp,
Cashew nut fried in ghee – few numbers (optional),



Method:
• Powder the sugar and transfer it into a wide plate. Add cardamom powder.
• Roast the whole gram in a kadai till all of them turn brown, do not let it burn so keep stirring continuously. Allow to cool, powder them and add to the sugar. Mix thoroughly.
• Heat ghee in the kadai, when sufficiently hot, pour it over the gram and sugar mixture little by little and stir it using a spoon.
• Now apply cool ghee in your palms and start rolling the mixture into lemon sized balls when it’s warm.
• Place one cashew nut into each ball while rolling.
• To know whether the temperature of ghee is correct, take little hot ghee in a spoon and pour it over the dry mixture. If you get a crackling sound but the mixture do not burn, its right temperature. If the mixture burns and changes color immediately then it’s too hot, allow it to cool for a while before using.
• In case you are not able to roll it then heat the entire mixture in a kadai again for a minute and then roll as immediately as possible. Additional spoon of hot ghee can also be added to correct the mixture.
