Indian rice dumplings or Simple kozhukatta.

One of the most common breakfast recipe in my home. The traditional kozhukatta is prepared with different stuffing's, but this is the most simplest version without stuffing's and very very easy to prepare.

Ingredients:
Lightly Roasted Rice powder - 1 cup,
Coconut grated - 1/2 cup,
Water - 1 cup,
Salt - 3/4 tsp,
Oil - 1 tsp,
Cumin seeds / jeera - 2 tsp.

Method:
1. Boil water along with salt and oil.
2. Spread the rice powder on a mixing plate and sprinkle cumin.
3. Pour the hot boiling water over the rice and mix with a spoon.
4. Spread coconut over it, cover the mixture with a cloth or lid and
     allow it to rest for 10 minutes.
5. Knead well  to form a dough.
6. Roll into small lemon sized balls and steam for 15 minutes in a steamer - I use Idly steamer.
7. Kozhukatta is ready. Serve with Chickpea masala curry (Channa masala / Kadala curry).

 Note : Roasted Rice powder is readily available in markets as Idiyappam powder or Appam powder.
           Alternatively you can powder it at home in the below method.
           1. Soak the raw rice for about 5 to 6 hours.
            2. Drain the water off and hang in a thin cotton cloth for one hour.
           3. Powder it in a dry mixer or in a mill.
           4. Sieve it to get fine rice powder and lightly roast it for about 8 to 10 minutes.
