Chickpea is one of the most commonly used ingredients in Indian recipes. So here's the most popular recipe of Kerala which is served as a side-dish for traditional breakfasts. Ive simplified the method for easy and quick cooking.
Ingredients:
Chickpea - brown / Kadala - 3/4 cup.
Masala:
Coriander seeds - 2 tbsp,
Dry red chilly - 4 nos,
Pepper corns - 1 tsp,
Coconut grated - 1/2 cup,
Ginger - 1 inch long piece,
Garlic - 6 - 8 cloves,
Garam masala - 1/2 tsp(optional),
Salt - 11/2 tsp or as per taste,
Turmeric - 1/4 tsp.
Seasoning:
Oil - 2 tbsp,
Onion chopped - 1 medium.
How to prepare:
1. Soak chickpea overnight if its in the dried form.
2. Cook in pressure cooker upto 3 to 4 whistles.
3. Roast the coriander, chilly and pepper in a pan for about 3 to 4 minutes till you get the aroma.
4. Add coconut to it, mix and switch off flame, no need to roast coconut. Allow it to cool.
5. Grind the roasted ingredients(above) along with ginger and garlic.
6. Pour the ground paste into the cooked chickpea and boil.
7. Also add turmeric, salt and garam masala and boil till the curry slightly thickens.
8. Take a small pan, heat oil and fry onion till translucent and add to the curry.
9. Chickpea masala curry is ready.
10. Best combinations are Puttu and Kadala curry or Appam and Kadala curry
or Kozhukatta and Kadala curry.
